I've been planning to make dinner on a weeknight for two weeks now. Hubby either takes me out for dinner (as neither of us has enery to eat or clean up after) or I am falling asleep at 8 pm after getting home around 7. The gym? Forget it!

But I made a potato cream soup today. Sauteed onion, garlic and mushrooms and then added microwaved potatoes and carrots to speed up cooking time. Added water and boiled it for a bit. Stopped the pot to go for a 10 minute jog with hubby (this was shocking new initiative of his which was great) and came back to puree half of veg then add it back to soup to make it creamy. Rosemary, sage, pepper to taste.

Side of baked yellow pepper with goat cheese and cherry tomato (very quick to make), side of thin sliced pork. Cheese bread to finish.!!!!!!!!!! YUM!

Dessert was apple rubarb compote that I made on weekend when I had a cooking whirlwind and used lots of dishes.

Anyway, I feel healthier for eating homemade food with lots of veggies.

Best of all, LEFTOVERS!!!!!!!! No more huge cooking!!!!

Darn, it's nine in the morning and now I want dinner. And I am stuck in the office all day so no chance of that.

See, that's where the time difference sucks. It's 11:40 pm here and I am now ready for a good night's sleep!

Ahhhhhh..... comfy futon with fluffy quilt and perfectly soft pillow at just the right height for my neck....... ahhhhhh.

Yummy soup and that desert....too early for dinner for me though!

It's 10:18am my time and I'm stuck in the office too as the other administrative staff are out and I'm doing a pit load of mailing today...blech! (I can handle it though, I've had worst days!)

Good thing is I can turn my music up a little louder while I work!
